This school year is a BIG deal. Em is heading into SIXTH grade and will officially be an 11 year old on Thursday. This past summer, she spent the entire day at her program. Typically, she would stay home in the morning and then attend the afternoon program because of behavioral issues but this summer, she did great and really worked hard to keep her temper in check. I decided that this new school year, we were going to work on more independent living skills. She needs to learn to take care of herself and a great way to begin is learning how to make after school snacks!
This weekend, we made a trip to Walmart. The trip was multi-purpose. First one being it was time to cut her rear-end length hair. I haven't cut her hair since her surgery in 2009 and it's been overdue. Her hair is beautiful but it had so many lengths from being shaved in 2009 for surgery and again in a revision surgery in 2010. Also, she's 11. She's ready to take steps forward to growing up! Without further ado- here's her before and after! Whoo hoo! She loves it. She kept telling me she was brand new and changed! I just adore her!
The other reason we went? To find easy items she can help prepare for delicious snacks after school!
When I was thinking of snacks, I was thinking something super simple that she can really help with. She always wants to help but a lot of the things I make haven't really been easy for her to help with due to her various different abilities. What else is easier than Delimex Taquitos and Bagel Bites?
I had two ideas the second I saw them: guacamole and meatball sliders. Simple enough! When making the guacamole, she can easily help mash and stir and with the meatball sliders, she can help put on the marinara and mozzarella!

I absolutely love Delimex Chicken taquitos. They are soooo good. They are literally my favorite taquito.
Feel free to save this recipe card to make this delicious gaucamole with your children! (Or even just for yourself!). I know cottage cheese probably sounds really weird but it's sooo good in guacamole but if you despise cottage cheese, you can easily substitute sour cream or just leave it out all together!
We also made meatball sliders with Bagel Bites' Three Cheese! These are so much fun and ridiculously easy and YUMMY!

This weekend was a success! Em is really excited to start helping to make snacks and she's ready to rock her new fabulous style when school returns in a week!
