*fans herself* It's super hot right now. We have been living with Extreme Heat the last 10 or so days and that means a few things. First- Hibernating for most of the summer. Second- Becoming creative with indoor activities to prevent boredom. Third- I really, really don't want to cook complicated meals. I am sure you can understand it.
We have a lot of fun game nights in, late night bowling, movie nights and craft nights at home. It's fun and really requires us to become creative. I also love being able to create easy and totally effortless meals.
Any way I can find to create a shortcut without cutting short on flavor is a win with me. One of my favorite standbys is the rotisserie chicken. They are so versatile (and inexpensive). You really can not go wrong with picking one up. Cut off chicken and eat it on it's own, put it on a sandwich or shred the meat for recipes. (don't forget to save the carcass to make homemade broth!).
Next time you're at Walmart, you can just head to the deli and grab a fresh and hot chicken (and a two litre of Coke!).

I love hot wings.
I love french bread.
Heck, I love french bread pizzas!
Why NOT combine it all together? It is so perfect!
AND EASY.
Pull the meat off the rotisserie chicken and put it into a bowl. Pour enough hot wing sauce to coat the chicken.
Cut French bread lengthwise.
Place cut side up on to a baking sheet. Spread a light layer of ranch dressing on each half. Layer chicken, mozzarella and green onions.
Bake at 350 for 15-20 minutes (in a preheated oven) or until cheese is melted and the bread is toasted to your liking.
Sprinkle more green onions and buffalo sauce on top of baked pieces, if desired.
Pair it with a Coca-Cola and nom nom nom until your heart is content. Perfect for a game or movie night in! Or... a Pinterest party. Just saying.
RECIPE: BUFFALO CHICKEN FRENCH BREAD PIZZA
Ingredients:
1 loaf of French bread (Italian works, too)
1 rotisserie chicken
Bottled ranch dressing
Bottled wing sauce
Mozzarella cheese (shredded)
Green onions (sliced)
Instructions:
1. Preheat oven to 350 F.
2. Pull meat off chicken and shred with forks.
3. Add enough wing sauce to thoroughly coat chicken and mix well.
4. Cut bread in half lengthwise
5. Place bread on baking sheet, cut side up.
6. Spread a light layer of Ranch dressing on each side.
7. Top each piece of bread with a layer of chicken, a layer of cheese, and sprinkle some green onions.
8. Bake for 15-20 minutes (until cheese is melted and bread is toasted).
9. (Optional) sprinkle more green onions on each slice and drizzle more wing sauce.
