One of my all time favorite sandwich topping is chicken salad and there's nothing better than taking a classic and playing with it. My jalapeno avocado chicken salad is so full of flavor and makes GREAT leftovers. It's the PERFECT, wholesome snack when served on Wasa Crispbreads.

The jalapeno avocado chicken salad recipe is super easy and full of flavor. I make a large batch of it and eat it for lunch and snack all week at work. It is also one of those meals that just tastes even better the next day!
Full of cilantro, avocado, lime, tomatoes, chicken, mayo and seasoning. Delicious.
Jalapeno Avocado Chicken Salad Recipe:
2 12 oz cans of chicken breasts packed in water (you can use rotisserie chicken or cooked chicken breasts. It's approx. 2 cups.
1 bunch of cilantro, chopped.
1 roma tomato, diced
1 large avocado, diced
1 jalapeno, seeded and diced (use more if you want!)
2 small limes, juiced.
Sauce:
3 tbsp real mayo (you can use greek yogurt instead!)
2 tsp cumin
1/4 tsp salt
1/4 tsp pepper
Steps:
In a small bowl, mix together the sauce ingredients.
In a large glass mixing bowl, add all the above up to the sauce and stir.
Add in the sauce. Mix well and refrigerate at least an hour.
Put on top of your favorite bread, the avocado shell or on a Wasa crispbread. Enjoy!
