One of my favorite foods as a kid was a taco burger.
Literally- a taco on a bun. You could even call these Mexican sloppy joes but boy do I love them. I have had a serious craving for them lately.
Taco burgers are easy. You literally make a taco and put it on a burger bun. Easy peasy, right? However, we are going to take it up a notch with a delicious scallion, cilantro and lime ranch to top it! It's tangy, it's green and it's ranch! What more can a girl ask for? You can even turn your taco burger left overs into a salad! Yum!
I am seriously in love with this dressing!
Scallion Cilantro Lime Ranch

Ingredients:
1/2 bottle of Kraft Classic Ranch dressing (the 24 oz bottle)
juice from 1 lime
Cilantro, chopped. I used an entire bunch (I love cilantro!)
1/4 cup of chopped scallions (aka green onions)
optional: a little bit of jalapeno, if you want spiciness.
Instructions:
Put everything in a blender and blend until smooth. It should be a nice green color.
Put in a container and refrigerate until ready to use!
Taco Burgers:

Ingredients:
1 lb. ground beef
1 can of refried beans (16 ounce can)
1 packet of taco seasoning (or seasonings of your choice!)
1 4 ounce can of diced green chilies (drained)
Toppings:
Lettuce
Tomatoes
Kraft shredded sharp cheddar cheese
Salsa
Scallion Cilantro Lime Ranch
Buns (I love onion buns!)
Instructions:
1. Brown ground beef until no longer pink and drain the fat.
2. Add refried beans, taco seasoning and green chilies and cook until all is well heated.
3. Assemble the taco burgers with all your favorite toppings.
4. Feel like a kid again eating your taco burger and drinking a Kool-Aid Jammer!
