Have you ever eaten Mexican corn? I am talking about elotes that you get from a street vendor. When I first heard about them I thought WHY?! But after that first taste, I screamed. Dude. Grilled corn with mayo, crema, chile, lime, cotija cheese and that first bite will transform you and take you somewhere heavenly.
I already LOVE Mexican food and living in Arizona, we have access to so many fantastic Mexican eateries. The real deal. You don't have to go far for fresh tortillas made on the comal, carne asada, menudo, posole, elotes, Sonoran hot dogs, you name it- there are so many great spots to grab some excellent eats.
I LOVE fire-roasted corn. I love it so much that I buy bags of it and keep them on hand in my freezer and I also have a stockpile of canned fire-roasted corn in my pantry. I also keep frozen fire-roasted green chile in my freezer and cans in my pantry. I also have Ritz Crackers on hand. AT ALL TIMES. What can I say? These are my go-tos. Ritz Crackers are so buttery and versatile- I use them in my meatloaf (Oh yes, that recipe is coming soon), breading on chicken breasts and on hand for snacks. And of course, ice-cold Coca-Cola. (I always have Coca-Cola with Mexican food. Nothing pairs better, right?). A game time spread is NOT complete without all of my favorites!
Best part? You can grab both Coca-Cola and Ritz Crackers at Walmart!

Mexican Corn and Green Chile dip is a mix of simple ingredients with powerful flavors
Ingredients
- 3 cups fire-roasted corn
- 1 cup fire-roasted green chile (canned or frozen)
- 2 green onions, sliced
- 1/4 cup cilantro, chopped
- 1/2 jalapeno, de-seeded and diced
- 1 garlic clove, diced
- 1 teaspoon salt
- 1 teaspoon cumin, ground
- 2 tablespoons Mexican sour cream (crema)
- 1 lime, juice
- 1/2 cup queso fresco, crumbled
- 1/2 teaspoon chili powder, ground (optional)
Instructions
1. Mix together all the ingredients in a large bowl.2. Refrigerate for at least an hour. 3. Spread cream cheese on Ritz Crackers and top with dip
