A Little Desert Apartment

I have been craving Italian food lately.  Like seriously craving it.  However, I feel like I am dealing with a heat hangover.  Last week, we were dealing the final swing of monsoon heat and this week, it's COOL!  Go ahead and laugh at me but I was ready to break out with a sweater when temps dropped to 81.

Sue me.

Open windows with fall air blowing in my apartment.  Ahhhhhhhh.  Relief.

That means, it's time to turn on the oven.  Hallelujah!!! 


Bad thing is I have been working 45+ hours per week at my job and I have been EXHAUSTED and behaving badly.  I have been too tired and have had ZERO desire to cook anything from scratch and that means I have fallen back into a bad habit of just going through a drive thru.  It's stupid, expensive and unhealthy.

It's okay to need a break from cooking a full meal.  We deserve it.  I have been breaking the tempting habit of the drive thru by having backups in my freezer.  There are better options like Michael Angelo's  Italian meals.  They're always free of additives and have NO preservatives.  They even have an organic line.  Also, they're family owned and operated.

I recently made Michael Angelo's Lasagna with meat sauce and an easy cheesy french bread for dinner.




I can't eat lasagna without bread.  I love garlic bread, garlic cheese bread, crusty french bread... nom nom nom.  It's all delicious.

When I went to my Kroger store, they had the Taste of Italy event going (ends October 13th) and I grabbed lasagna, french bread, butter, garlic, parsley, parmesan and mozzarella cheese.   

This easy, cheesy French bread is so... well, easy. 

I softened the butter (whoops, a bit too long, I melted it but it's totally fine) and mixed in minced garlic and parsley.  I spread the butter mixture over French bread halves.  



Mixed together the mozzarella and parmesan cheese and sprinkled over the buttered French bread.   




Bake at 350 until cheese is melted.



Serve with lasagna and BAM! Dinner is DONE.
