If you have been foll;owing me on Instagram and Facebook, then you have seen my car after a lovely accident I got into the Monday before Thanksgiving. It was 1000% my fault and I am kicking myself- over and over and over. It was Monday AM, driving into work and the holidays and the short work week was on my mind (both a blessing AND a curse). I was at a stop light and was looking at something in my passenger seat when I heard a honk and noticed vehicles driving in my peripheral vision. I rushed, looked up and accelerated... and stopped, rapidly. Not soon enough.
I rear-ended the vehicle in front of me. Thankfully, nobody was hurt, my vehicle sustained all the damage and I have full coverage insurance. Sigh.
It has definitely put a damper on things. In August, I decided to change my insurance policy. I have less than a year on my car loan and wanted to focus on paying it off in the next few months. I dropped the car rental coverage and raised my deductible. I am also due for my timing belt, tune up and front tires. Face. Palm. So, needless to say- my car is FINALLY going into the body shop today (Monday) and picking up my rental car.
When it rains, it pours. Right?
I certainly put the desire to write on the back burner. See, a month ago, I decided to start banking a ton of NON sponsored posts and although I have photos and recipes written up- the desire to WRITE hasn't been there. I truly tried to balance it all out but... life. Life gets crazy.
Now, I am feeling it. I have been watching a ton of Crossing Jordan and have some serious Tom Selleck Screen time and I am feeling motivated to share this recipe.
A couple of weeks ago, I shared a recipe for creamy gouda macaroni and cheese that was soooo good. I decided that since I had a lot of left over cream of mushroom soup, it'd make for an AWESOME crock pot pork chops recipe. I was right.
Mushroom Onion Slow Cooker Pork Chops

4 pork chops
salt & pepper to taste
1 small onion, sliced
2 cups mushrooms, sliced
½ teaspoon paprika
2 cloves of garlic, crushed.
1 can cream of mushroom soup
¾ cup mushroom (or beef is fine!) broth
2 cups mushrooms, sliced

1 tsp browning sauce
1. In a medium sized bowl, mix together garlic, paprika, cream of mushroom soup, broth and browning sauce.
2. layer onions and mushrooms in the bottom of slow cooker
3. Add pork chops and season with salt and pepper.
4. Pour bowl of soup mix over pork chops.
5. Cook on low for 7-8 hours (or on high for about half the time).
Pork chops will practically melt right off the bone. Yum.
Serve over creamy gouda macaroni and cheese, rice or buttery egg noodles.
